I know what I'm drinking this NYE, French 75.

French 75 is a classic French cocktail which in my opinion is somewhat similar to a Margherita, Caipirinha or Mojito. All three cocktails are based on lemon juice and sugar. They are sweet, easy to drink and lethal. Have a couple of these and you'll grow a smile which will be hard to erase, I guarantee you that.
So here's how you do it.
You Need
2 oz (or 56g) Gin. Any brand you usually drink
1 oz (28g) fresh squeezed lemon juice
1oz (28g) simple syrup (if you're not sure how to make it, see instructions below)
1-2oz (28-56g) Champagne. (use a good one, it's NYE after all).

So easy to make. You'll need:
1 cup (128g) fine sugar
1/2 cup (64g) water
Now what...
In a small sauce pan over medium low heat, warm up the water and sugar and stir continuously until sugar is completely dissolved
Set aside to cool and transfer into a bottle or other empty container. Use until finished, then make it again.
French 75 Cocktail Instructions
Fill an empty champagne glass with water and ice and set aside to chill
In a shaker, combine the Gin, Ice, Lemon Juice and Simple Syrup
Shake well
Empty the champagne glass from the water and ice, and using a strainer pour cocktail liquid into the glass
Top with Champagne and garnish with a lemon twist
