Caramel Sauce (v)

Though we are not vegan, when we came across this recipe, we had to try it, and wow…We are hooked! Still can’t believe there is no cream in this recipe, it tastes so good, we have to hide it in a corner, or we’ll just drink it away.

CARAMEL SAUCE

  • Serving 1 = 16oz

  • Course Condiment , dessert

  • Cuisine Gluten free, Grain free, V

  • Freezer(ish)? No.

  • Good for 1-2 weeks

 

INGREDIENTS

  • 2 whole Medjool dates, pitted and finely chopped

  • 1.5 cups coconut cream unsweetened (divided into 1 + ½ cups)

  • ¾ cup coconut sugar

  • ½ Tsp Vanilla bean (pure vanilla extract can be substituted)

  • 1 Tbs arrowroot starch or cornstarch

  • Pinch salt (optional

 
 

NOW WHAT...

I. Add to a small saucepan, arrowroot starch, dates, and 1 cup of coconut cream


2. Whisk, on medium low heat, until sugar is completely dissolved, and color turns in to a golden dark brown


Note: make sure not to overheat, or caramel will burn


3. Add vanilla, and check for taste.


4. Gradually add reminder ½ cup coconut cream to get desired golden caramel hue


5. Continue to whisk on low medium heat until desired hue is reached. Take off heat and set aside to cool.


6. Pour into a jar. Caramel sauce will keep for 1-2 weeks.

  • Is it possible to make this recipe with regular cream?

Yes, it is.

  • What are Medjool dates?

Medjool dates are a variety of dates enjoyed for their natural sweetness. They're larger, darker, and more caramel-like in taste than other commonly known date types. Mostly found at organic sores and supermarkets. You may use regular store-bought dates if you are unable to source Medjool dates.

VANILLA BEAN

As suggested above, you may use vanilla extract, (make sure it is 100% pure), however in our minds nothing beats the real thing.


That is why we at SUSU believe in utilizing everything we have in the kitchen, which is adopting the Restaurant philosophy as well. It makes for better financial sense and if you think about it, it helps with the environment as well.


Being somewhat of a sugar addicts, once we empty the vanilla bean of it’s pods, we take the bean and place it inside a jar full of sugar. Leave it in a dark corner for 2-3 weeks, and you’ll get vanilla sugar which you will find irresistible and addictive.

 
  • Coconut Cream / Milk

There are plenty of Coconut creams and milks out there. However, there are only a few that are worth you money in our opinion. Here’s a list recommended brands by SUSU:

  • 365 by Wholefoods.

  • Simply Asia by Thai. This product is easily found everywhere. This is a link to Walmart.

  • Mae Ploy, Thailand. Hard to find. we go to our local Thai grocery store to get it. Instacart online store is a good option if you do not have a local Thai store in your area.
